Perfect Brownies: The Recipe That Always Works

At heart, brownies are a very simple recipe that anyone can manage, even if you and baking are not on first-name terms. You need no special equipment. One bowl, a wooden spoon and a suitable tin will do.

The secret of perfect brownies lies in honest ingredients: good butter and quality chocolate. Those are the two not to skimp on. The other secret is baking time. It is up to you whether you like your brownies fudgier or more baked through.

Ingredients

  • 200 g butter
  • 200 g dark chocolate
  • 175 g brown sugar
  • 3 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 75 g plain flour
  • 30 g cocoa powder
  • a pinch of salt
  • extra chocolate for the batter (optional)

Method

  1. Melt the butter and chocolate in the microwave or over a pan of simmering water and stir well.
  2. Add the sugar, lightly beaten eggs, vanilla, flour, cocoa and a pinch of salt.
  3. If you like, stir in extra chocolate chopped into larger or smaller pieces.
  4. Pour the mixture into a greased tin lined with baking paper and put it in an oven preheated to 180 °C. Bake for 20 to 30 minutes, depending on your oven and on whether you want the brownies fudgier or more baked.
